Warm Potato Salad

This is our first recipe for the #Hotpotatofoodbloggerschallenge and its our take on a warm potato salad which is perfect for those cold winter nights 

Warm Potato Salad with bacon

Ingredients

3 x Medium  Red Skin Potatoes
2 x Large Nicola Mediterranean Potatoes
3 x Medium Everyday Potatoes
1 1/4 x Tablespoons Salt
2 x Cloves Garlic
200g x Diced Bacon
1 x Teaspoon Margarine
1 x Teaspoon Crushed Garlic
3 x Tablespoons Diced Chives
1 x 250ml Fresh Cream
1 x Teaspoon Freshly Ground Black Pepper
1 x Teaspoon Dijon Mustard
1 x Tablespoon Granulated Sugar
1 x Tablespoon All Purpose Flour

Method:

1) Cut red skin potatoes and everyday potatoes in quarters with skin on.
2) Peel Nicola Mediterranean and cut in quarters
3) Add potatoes, 2 garlic cloves and 1 tablespoon of salt to a saucepan with boiling water (allow water to cover potatoes)
4) Cook on high heat till soft – about 30 minutes (Cooking times may vary)
5) Fry Bacon

For the Sauce:

1) Add margarine to a small saucepan on high heat
2) Add garlic and 2 tablespoon chives to the melted margarine
3)Add cream, sugar,pepper ,1/2 teaspoon salt (1/4 tablespoon) and mustard and bring to boil
4) Once its reached boiling point whisk in the flour and remove from heat

To Complete the dish:

1) Cut boiled potatoes into smaller pieces
2) Add bacon and sauce and stir till all potato pieces are coated
3) Garnish with remaining chives
4) Serve hot

Please Note:
More seasoning may be required, it all depends on how salty the bacon being used is. Bacon can be substituted for a different protein such as chicken
