Our last recipe is a old family favorite just a cheesier version

Potato Bake With Chicken And Veg

Potato bake
Ingredients

For The Chicken

2 x Tablespoons Olive Oil
4 x Skinless boneless chicken breasts
1 x Tablespoon Course Salt
1 x Tablespoon Black Pepper

Method

1) Cut chicken into bite sized pieces 
2) Season with salt and pepper
3) Fry on high heat in olive oil for about 15 minutes or until golden

For The Sauce

100g x Grated Mozzarella 
100g x Grated Cheddar Cheese
2 x Tablespoons Full Fat Margarine
3 x Tablespoons Ina Paarman Italian Cheese Spice
1 1/2 x Teaspoon Freshly Ground Black Pepper
1 1/2 X Teaspoon Course Salt
2 x Tablespoons Granulated Sugar
3 x Tablespoons Flour
3 x Cups Full Cream Milk

Method

1) Melt Margarine in a medium size saucepan
2) Add pepper , salt , cheese spice and sugar and stir
3) Sift flour straight into saucepan and whisk till margarine and flour combines (soft ball stage)
4) Add Milk and whisk till the flour is dissolved into the milk
5) Bring to boiling point whisking constantly till it starts to thicken
6) Add 70% of cheese and whisk in till cheese melts and remove from heat
7) You should now have a thick , rich cheese sauce

Putting it together

4 x Potatoes cut into slices and parboiled in salt water 
250g x Frozen Mixed Veg
1 x Portion Of Chicken (prepared as above)
1 x Cheese Sauce (as per recipe above)
Freshly Ground Black Pepper

Method

1) Place a single of potato and the base of oven dish
2) Sprinkle some pepper over
3) Add Chicken and veg
4) Add last layer of potato on top 
5) Throw over cheese sauce ensuring that all the potato is covered
6) Top with remaining cheese
7) Bake at 180°C for 45 minutes to an hour 
8) Turn oven on grill and leave till cheese turns golden brown (watching it closely)

Please Note: This is my go to cheese sauce recipe and it can be used for anything from pasta to cauliflower and cheese sauce. Protein can be substituted with any other protein that you would prefer or left out completely for a Vegetarian option
